Here’s an example of how we commonly process a hog. All cuts can be customized:


Belly

  • Cured & smoked bacon
  • Sliced fresh side
  • Trim for sausage or ground


Ham

  • Fresh: 2 roasts, 6 ham steaks
  • Cured & Smoked: 2 roasts, 6 steaks
  • Available whole, all roasts, or all steaks


Shoulder (Butt)

  • Regular cut: 2 roasts, 6 steaks
  • Save whole butt, all roasts, steaks, or trim


Loin

  • Regular pork chops: ¾” thick, 4 per pack
  • Iowa Chops: 1 ¼” thick, 2 per pack
  • Tenderized loin slices (4 per pack)
  • Boneless loins
  • Smoked chops: 1” thick, 2 per pack


Trim

  • Ground Pork: 1 lb. bulk or patties
  • Seasoned Sausage: 1 lb. bulk or patties
  • Italian Sausage: 1 lb. bulk

Specialty Pork Sausages & Brats

(15 lb minimum per variety unless noted)

  • Fresh Brats (Natural Casings): 4 per pound
  • Fresh Cheese Brats: with cheddar or jalapeño cheese
  • Smoked Brats (Skinless or Natural Casings)
  • Smoked Cheese Brats
  • Breakfast Brats: With potato, cheese, and onion
  • Smoked Links (Natural Casings)
  • Grange Links (Skinless Casings): 10 to a pound
  • Flavors: Regular, Cheddar, Jalapeño, Maple, Ham & Swiss
  • BBQ Pork: Fully cooked, sauced – 15 lb minimum

  • Slaughter & Processing: $1.25/lb (hanging weight)
  • Split Charge (per half hog): $5.00

Curing & Cuts

  • Curing (for hams/bacon): $1.50/lb
  • Flavored Bacon: $0.50/lb
  • Tenderizing: $0.50/lb

Ground & Sausage Products

  • Ground Pork (1 lb packs): $0.50/lb
  • Ground Pork Patties: $0.60/lb
  • Seasoned or Italian Sausage: $0.90/lb
  • Sausage Patties: $1.05/lb

Brats & Links

  • Fresh Brats: $1.75/lb
  • Fresh Cheese Brats: $2.00/lb
  • Smoked Brats or Links (skinless or natural casing): $2.25/lb
  • With Cheese: $2.75/lb

Specialty

  • BBQ Pork (includes sauce): $1.50/lb
