Half Beef Cut Sheet Example
Here’s a general breakdown of how your half beef may be processed (exact amounts will vary based on the animal and your preferences):
- Chuck: Approx. 8 blade roasts + 2 arm roasts (3 lb. each)
- Sirloin Tip: (2) Rolled Roasts
- Rump Roast: 1–2 Roasts
- Ribeye Steaks: 1” thick, 2 per pack – ~8 packs
- T-Bone Steaks: ¾” thick, 2 per pack – ~8 packs
- Sirloin Steaks: ¾” thick, 1 per pack – ~10 packs
- Round Steaks: ¾” thick – cubed, tenderized, or halved (~20 packs)
- Brisket: Choose to keep whole or grind
- Stew Meat / Soup Bones / Ribs: Keep or grind per your request
- Ground Beef: Packed in 1 lb., 1.5 lb., or 2 lb. options
- Burger Patties: Optional – 4 patties/lb or 3 patties/lb
- Miscellaneous Cuts available based on your preferences
